 Cazes Canon du Maréchal white 2008
This wine is delightfully lively and fresh, with superb fruit aromas and tastes. It is a great everyday drinking wine, is good as an aperitif or with white meat and fish and is especially good with asparagus and shell-fish.
It is made from a blend of 60% Muscat of Alexandria, 20% Muscat petit grain, 20% Viognier.
The grapes are machine picked during the night (it's hot in Languedoc and this helps harvest without sun damage) and left to macerate for 24 hours at low temperature before pressing. After racking, the alcoholic fermentation is temperature controlled at 18°C. The alcohol level is 12.5% alc/vol.
This wine is bottled within 6 months of the harvest, and stored in air-conditioned cellars.
Best drunk young (within 2-3 years) at 12°C.
