Domaine Montchovet

Didier created the first parcel of this domaine in 1984 with just 0.5 hectare (about 1.2 acres) and started using biodynamic methods the following year.
Over the years, more parcels of land where bought and treated to clear the chemicals from the soil before further planting with new vines to supplement some of the older ones. In 2001 he completed a large hangar which acted to harvest rainfall used to make biodynamic preparations as well as providing shelter for the animals (horses and donkeys), which in turn provide much needed compost!

Didier follows the main biodynamic principles:
- respect the soil
- respect the plants
- respect the natural rythyms
- respect men
- respect the terroir.

| No chemicals are used on the land. Only preparations made from the output(!) of the local animals and plant based tisanes. Grapes are picked by hand and no commercial yeasts or chemicals are used in the winemaking process. Didier was given Demeter certification in 1993 and has been audited and approved several times each year since then. |

The vineyard consists of 9.2 hectares in total of which around 2.5 hectares is devoted to Pinot Noir for the production of the Bourgogne Hautes Côtes de Beaunes and 0.7 hectares for the production of Pommard.
Didier plants fruit trees alongside the vines (apples, cherries, pear and peach). The way that the vines are managed encourages threatened species of wildlife, particularly birds, butterflies and orchids.
